    I LOVE your technique for mayo. I have a question for the source for your olive oil. I noted that you used Carbonell olive oil – extra light. I have always used organic and can not seem to find any organic “light” olive oil. Even doing a search online for Carbonell olive oil – all the links showed only extra virgin with no mention of light. How important is it that it be light? Can I just use organic Extra virgin?

      Connie, thanks for your question. Sorry for the delay! Answering questions now that med school is on break. It’s crucial to use light olive oil because the taste of EVOO would be a bit overwhelming in this mayo. 😉 You can still get the benefits of organic EVOO by using it on salads and for light pan frying.
