I have a question for the source for your olive oil. I noted that you used Carbonell olive oil – extra light. I have always used organic and can not seem to find any organic “light” olive oil. Even doing a search online for Carbonell olive oil – all the links showed only extra virgin with no mention of light. How important is it that it be light? Can I just use organic Extra virgin? It’s crucial to use light olive oil because the taste of EVOO would be a bit overwhelming in this mayo. 😉 You can still get the benefits of organic EVOO by using it on salads and for light pan frying.
