Thank you for all the great recipes! I have been a juvenile diabetic for 38 years now, and have used so many of the sugar alcohol sweeteners. But I only recently found out that erythritol is the only one with a zero rating glycemic impact! All the others will eventually raise the blood sugar, but it doesn’t happen until hours later (about 3-4 for me), so using erythritol has been a great choice for sweetening purposes.

I love how you mix sweeteners, too. I often use the erythritol a little xylitol and a little stevia powder to make things taste sweeter. I can’t imagine how much time and money has gone into creating all these wonderful dessert recipes! But I thank you from the bottom of my heart!

Thanks so much for all your work and experimenting. I have cut out starches and sugars over the last 5 months, and have gotten my 18 year old daughter on board as well, as we are both trying dietary changes to improve thyroid and adrenal fatigue issues. Your website is a lifesaver! Biscuits, muffins, lemon bars, instant chocolate cake, key lime pie, bread rolls, chocolate chip cookies, coconut pancakes…everything we have tried has been an unqualified smash hit.     Lauren, I am so glad your site is still here. My daughter (now 21) and I are still eating low carb/ sugar free. She has been diagnosed with many food and environmental allergies, heavy metal toxicity, and a host of other issues that really limit her food list. We have been eating basically GAPS/ SCD, only sugar free. Your site continues to be one of our top resources for consistently great recipes that she can not only eat without getting sick, but really savor and enjoy! And my little guy (now 7 1/2) still thinks I am a food super hero when he gets to eat cookies or cake for breakfast!
