Lauren Benning!  You’re a hero (heroine) of mine!  I have no idea if you know who or what I am, but I started low-carbing in early 2010, at a time when you were doing a lot of blogging and your website was massively important to me.  You helped me in ways that go way behind simple cakes and pastries.  Your website gave me hope, information and limitless options … for years!  I dropped about 150 lbs and completely turned my life around … thanks in huge part to you.  You!

There were a few others, plus lots of dialogue at Low Carb Friends, but yours was the best site of them all and focused on food at a level higher than most … and I sorely needed that.  You shed light on a lifestyle that could exist with excellent ingredients, outside of Carbquik.  Thank you … thank you!

“I’ve been following you for years. I’m a T2 diabetic 63 year old male trying to get up to speed on cooking and baking low carb. Thanks to folks like you I’m getting better at it, and have lost about 30 pounds and doing well on my A1C. I have found your recipes to be easy to master, with stunning results, especially since cooking is not a natural activity for most men let alone using unfamiliar low carb ingredients.

You always use readily available ingredients unlike some recipes from others that are extraordinarily intricate with hard to find supplies. And I like your shortcuts like how to replicate Truvia, for example, for far cheaper than the name brand. I tried this and it worked wonderfully. And I love your emphasis on fun treats which taste great. That approach really helps me to stay on this new way of eating for life. No sitting around dreaming about the day I’ll be able to quit a diet… that’s a recipe for failure for sure.”

I want to thank you for all the wonderful recipes you have posted on your blog. I love trying them and sharing them with my family. Your blog is amazing and an inspiration for us low-carb clean/healthy eaters and I’ve added so many of your recipes to my cooking and baking.

I hope that you continue adding new recipes and that they are published in a variety of places – magazines, ezines, websites, wherever possible because there are so many people out there that can benefit from your blog.

Thank you for all the great recipes! I have been a juvenile diabetic for 38 years now, and have used so many of the sugar alcohol sweeteners. But I only recently found out that erythritol is the only one with a zero rating glycemic impact! All the others will eventually raise the blood sugar, but it doesn’t happen until hours later (about 3-4 for me), so using erythritol has been a great choice for sweetening purposes.

I love how you mix sweeteners, too. I often use the erythritol a little xylitol and a little stevia powder to make things taste sweeter. I can’t imagine how much time and money has gone into creating all these wonderful dessert recipes! But I thank you from the bottom of my heart!

My husband was diagnosed as diabetic and celiac last spring. Your recipes have helped make the diet adjustment easier for him to live with by making it possible for him to have some of the sweets he loves. Thank you!

I have tried many of your recipes and have never been disappointed. Of course, I love some more than others, but wow, I think it’s wonderful to have a place to go to find just the right thing for the right occasion!

I really love your recipes and use them all the time. People have no idea how healthy they are. When they eat a cupcake and I tell them that it’s made of beans they just do not believe it. I love to see the looks on their faces!! Thanks!!!!

Thanks so much for all your work and experimenting. I have cut out starches and sugars over the last 5 months, and have gotten my 18 year old daughter on board as well, as we are both trying dietary changes to improve thyroid and adrenal fatigue issues. Your website is a lifesaver! Biscuits, muffins, lemon bars, instant chocolate cake, key lime pie, bread rolls, chocolate chip cookies, coconut pancakes…everything we have tried has been an unqualified smash hit. And we are both feeling better and really glad to be eating this way! I am looking forward to trying this recipe with pecans (sort of a pecan pie bar) and your pumpkin cake to take to the family Thanksgiving gathering this year!

I have continued to enjoy your website and share it with many others looking for healthy recipes. We haven’t had a “reject” yet! My five year old likes to tell people, “Mommy knows the secret… she can make things that are gluten free that don’t TASTE gluten free” (or substitute “sugar free”, as the case may be). Thanks for helping me be a food super-hero for my littlest foodie!

Lauren, I am so glad your site is still here. My daughter (now 21) and I are still eating low carb/ sugar free. She has been diagnosed with many food and environmental allergies, heavy metal toxicity, and a host of other issues that really limit her food list. We have been eating basically GAPS/ SCD, only sugar free. Your site continues to be one of our top resources for consistently great recipes that she can not only eat without getting sick, but really savor and enjoy! And my little guy (now 7 1/2) still thinks I am a food super hero when he gets to eat cookies or cake for breakfast!

Blessings to you as you continue the path God has for you, and thanks so much for keeping this site running. It is such a blessing for so many.

Sheila, thank you for continuing to visit, and for spreading the word about the recipes! So happy to hear your family is still enjoying them. It’s feedback like yours that makes it worth it to maintain the site. Does your little guy have any favorites? Do you all have any recipe requests?
