Thank you for all the great recipes! I have been a juvenile diabetic for 38 years now, and have used so many of the sugar alcohol sweeteners. But I only recently found out that erythritol is the only one with a zero rating glycemic impact! All the others will eventually raise the blood sugar, but it doesn’t happen until hours later (about 3-4 for me), so using erythritol has been a great choice for sweetening purposes.
I love how you mix sweeteners, too. I often use the erythritol a little xylitol and a little stevia powder to make things taste sweeter. I can’t imagine how much time and money has gone into creating all these wonderful dessert recipes! But I thank you from the bottom of my heart!
My husband was diagnosed as diabetic and celiac last spring. Your recipes have helped make the diet adjustment easier for him to live with by making it possible for him to have some of the sweets he loves. Thank you!

Thanks so much for all your work and experimenting. I have cut out starches and sugars over the last 5 months, and have gotten my 18 year old daughter on board as well, as we are both trying dietary changes to improve thyroid and adrenal fatigue issues. Your website is a lifesaver! Biscuits, muffins, lemon bars, instant chocolate cake, key lime pie, bread rolls, chocolate chip cookies, coconut pancakes…everything we have tried has been an unqualified smash hit. And we are both feeling better and really glad to be eating this way! I am looking forward to trying this recipe with pecans (sort of a pecan pie bar) and your pumpkin cake to take to the family Thanksgiving gathering this year!
